Romanesco Cheddar Bites

1 head of romanesco, chopped and steamed until tender
1 cup breadcrumbs
1/2 medium onion, minced
3 eggs, beaten
6 – 8oz Cheddar cheese, grated
Spike

Pre-heat the oven to 375°F. Chop romanesco into uniform pieces. You don’t want big chunks or the patties will fall apart. Throw everything into a bowl and mix thoroughly. Spray a baking sheet with cooking spray or line it with parchment paper. Shape the mix into small patties. Bake 15 minutes. Flip and bake 12 more minutes.

Oatmeal Raisin Breakfast Cookies

1 cup rolled oats
scant 1 cup applesauce or over-ripe banana (mashed)
1/2 cup sun butter (can use nut butters too!)
1 tsp cinnamon
1 tsp pure vanilla extract
1/4 cup raisins
pinch salt if desired (taste the dough to decide)

Preheat the oven to 350 degrees. Cream the apple sauce with the sun butter, then add all other ingredients and mix until well-combined. Shape into cookies and bake for around 20 minutes.

Slow Cooker Honey Sauced Chicken

4 boneless, skinless chicken breasts
1/2 cup honey
1/2 cup soy sauce
1/2 medium onion, chopped
1/8 cup ketchup
1 tbs olive oil
1 clove garlic, minced
juice of 1/2 orange
Spike
Season both sides of chicken with Spike, put into crock pot. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and orange juice. Pour over chicken. Cook on low for 3 1/2 hours. Serve over rice or noodles.

To bake chicken as a 30 minute meal:
Dice chicken and season both sides with salt and pepper, place in 8×8 pan. Pour sauce over chicken and bake at 350 for 20 minutes, stirring after 10 minutes.
Serves 2.

Izzyisms Volume 28

Wendy: what did you play
Izzy: tiles, play dough, blah, blah, blah.

Izzy: Look mommy! I wiggled out of my straps (of her car seat).
Wendy: please put them back on.
Izzy: why?
Wendy: because it is dangerous.
Izzy: why?
Wendy: because it is dangerous.
Izzy: WHY AREN’T YOU GIVING ME ANSWERS?
Wendy: because if daddy gets into an accident you will fly through the windshield and get hurt.
Izzy: okay mommy. I put my straps back on.
