Nutella Brownie Bites

I’m making these with peanut flour tonight. Hope they turn out!

Ingredients:

1/2 cup Nutella spread
1 large egg
5 tablespoons all-purpose flour
1/2 cup chopped hazelnuts

Directions:

1. Heat the oven to 350 degrees. Line a 12-cup mini muffin pan with paper or foil liners.

2. Put the Nutella and egg in a medium bowl and whisk until smooth and well blended. Add the flour and whisk until blended.

3. Spoon the batter into the prepared muffin tins (about 3/4 full) and sprinkle with the chopped hazelnuts.

4. Bake until a pick comes out with wet, gooey crumbs, 11 to 12 minutes. Set on a rack to cool completely. Serve immediately or cover and store at room temperature for up to 3 days.

Switch-Ins: In place of the hazelnuts, switch in one of the following:

ground cinnamon, 1/4 teaspoon (add with the flour)
peanuts, chopped, 1/4 cup

Quinoa Muffins

Ingredients

Makes 12
1 cup quinoa, rinsed
1/4 cup vegetable oil, such as safflower, plus more for pan
2 cups all-purpose flour, plus more for pan
3/4 cup packed dark-brown sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup raisins
3/4 cup whole milk
1 large egg
1 teaspoon pure vanilla extract
Directions

Preheat oven to 350 degrees. In a medium saucepan, bring quinoa and 1 cup water to a boil. Reduce to a simmer; cover, and cook until water has been absorbed and quinoa is tender, 11 to 13 minutes.
Meanwhile, brush a standard 12-cup muffin pan with oil; dust with flour, tapping out excess. In a medium bowl, whisk together flour, sugar, baking powder, salt, raisins, and 2 cups cooked quinoa; reserve any leftover quinoa for another use.
In a small bowl, whisk together oil, milk, egg, and vanilla. Add milk mixture to flour mixture, and stir just until combined; divide batter among prepared muffin cups.
Bake until toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes. Cool muffins in pan, 5 minutes; transfer to a wire rack to cool completely. Store in an airtight container up to 5 days.

Izzy: (gazing out the kitchen window) I’m thinking about the birds.
Wendy: What do you think about them?
Izzy: I think they’re happy.

Izzy shouts: it’s time to wake up! Then proceeds to blow the vuvuzela.

While playing in the tub, she babbles to herself and her toys: such a beautiful home, such a beautiful home. Mama daddy mama dada. Poo poo poo poo. Bye bye. hello hello. I got a tail. Mommy!
