Broccoli Bake

1 large bunch of broccoli
Olive oil
1 small onion, chopped
1 cup bread crumbs
5 cloves garlic, chopped
1 egg, lightly beaten
1/2 cup grated Parmesan, plus more for topping

Steam or boil broccoli until tender. Drain and mash as you would potatoes, leaving small bits of broccoli. In a large skillet, sauté onion and garlic in oil, add basil. When onion begins to brown, add broccoli and stir to mix. Add bread crumbs and cheese and stir until well blended. Remove from heat and add egg. Stir again to blend; season to taste. Place in casserole and top with a little more grated parmesan cheese. Warm in 350 degree oven for about 15 minutes.

Thick and hearty chicken soup

1 cup shredded carrots
1/2 cup chopped green onions
2 cloves garlic, minced
3 tablespoons of butter
1/4 cup flour
1 cup chicken broth
1 1/2 cup milk
1/2 teaspoon Worcestershire sauce (or to taste)
1/8 black pepper (or to taste)
1/2 teaspoon cumin
1/2 teaspoon paprika
1 cup grated cheddar cheese
1/2 greek yogurt
1 1/2 cup cooked chicken, cubed
1 Yukon Gold potato, parboiled
1/2 cup broccoli, chopped

In a medium sauce pan, melt butter and add carrots, green onions and garlic. Cook until soft. Add flour and slowly add milk, chicken broth, Worcestershire sauce and spices.

Bring to a low boil and let thicken. Stir in cheese until melted. Stir in yogurt and add chicken, potato and broccoli. Heat until all ingredients are warmed. Serve immediately.
