Ground Turkey Stroganoff

This was a big hit at our house tonight. Each of us ate up every last drop on our plates. Mitch and I went back for seconds!

1 leek, finely sliced
2 garlic cloves, minced
10 oz ground turkey
1 cup sliced mushrooms
1/2 cup frozen peas
1 box condensed portabello mushroom soup (Trader Joe’s)
1/3 c. half and half
1/3 c. vegetable broth
1/2 c. greek yogurt
Spike Seasoning
Egg Noodles, cooked

In a skillet, cook turkey, garlic and onion until meat is no longer pink. Add mushrooms and peas. Cook and stir for 1 minute. Stir in the soup, half and half, and Spike Seasoning.

Bring to a boil. Reduce heat. Simmer, uncovered for 5-10 minutes.

Stir in greek yogurt and vegetable broth; heat gently. Do not boil. Serve over cooked egg noodles.

Monday: Turkey Stroganoff, broccoli
Tuesday: Tilapia, Crab Cocktail, creamed spinach
Wednesday: Chicken Fajitas and cabbage/radish salad
Thursday: Chicken Sausage, Spaetzle, and roasted cauliflower with cheese
Friday: TBD–Celebrating Chinese New Year with PKS, and there will be some nibbles. Was hoping to check out off the grid, but they’re closed for winter. Bummer. I guess we’ll just nibble on leftovers.
Saturday: Pasta of some kind
Sunday: Baked eggs and tortillas in creamy tomato sauce

With a very mean frown, Isadora brandished a butter knife and proclaimed: anybody gets cut, you’re going to jail.

(I have to wonder what she’s watching when she pulls up Netflix. I caught her trying to watch Breaking Bad this evening.)

After a particularly rough evening with an overtired and cranky baby…
Wendy: will you be a good girl tomorrow?
Izzy: No! I want to be a good girl right now!

Izzy woke up and didn’t get out of bed right away. She said she’s going to lay here and rest a bit. She got up to color, but laid back down and said she was exhausted because she ran around too much today.

While petting the hair that grows on my arms, Izzy says: you have a beard on your wrist. Just like daddy!

Wendy: Why do you like Kipper (a TV show I don’t like) so much?
Izzy: He entertains me a little bit.

Executed my first real disciplinary action against Izzy tonight. She’s been playing games at toothbrush time. I warned her last night if she did it again, I would take away all of her My Little Ponies. Well, she messed around and I had to follow through. You should have heard her howl: nooooooo! Please don’t take my ponies. I promise to be good.

Absolutely heart breaking.

As I was putting izzy to bed, she said: I’m trying to say a word, but I don’t know how to say it. Thinking I could trick her into saying it, I reply: what word are you trying to say? Izzy reminds me: I don’t know how to say it!

Telling me about her nightmare. It scared me when the red thing was walking with one foot! You were home and we were outside. One of them tried to get on our street. I was trying to keep daddy safe from the red thing. The red thing tried to tickle me! We tried to get home. The red things looked like mans. (Mitch finally figured out she was talking about the Chinese New Year parade.)

While wearing a tutu, Izzy: look! I’m dancing on my tip toes.
Wendy: That is a nice dance.
Izzy: shhh! You’re at the Nutcracker.

Can I grow little and taste your boobies [nurse] again?

As I was putting Izzy to bed for the night, she said, “let’s think about Popsicles.”

Izzy to Potato Head as she is dismantling him: You can’t stay here. It’s clean up time. Sorry. (sorry was stated in a slightly sarcastic tone.)

While at a preschool interview…
Teacher: What’s your name?
Izzy: Isadora. It’s written on my back. (I had no idea she realized I put a name tag on her back)

After waking up from a bad dream: I saw your head falling down. It’s falling down, mama. It’s falling down! (this one made me cry a little. It took several minutes to soothe her and convince her that my head was okay.)
